There is no means in measuring human senses and perception better than using human themselves. Instrumental analysis can differentiate certain characteristics of products, but is such difference important when it comes to human perception? Can people detect such difference? Is the difference important enough to change people’s perception on quality? Sensory panel development is a process in which a group of people is trained to describe, distinguish and evaluate sensory characteristics of product, including appearance, aroma, taste, flavor, texture, and aftertaste of products. The training process will gradually transform panelists into experts in assessing sensory qualities of products. Sensory profiles and product insights would be obtained and these useful information could be applied in new product development.
